How do you make vegan no bake cookies?

Vegan no-bake cookies replace butter with coconut oil and milk with oat or almond milk. They taste just as rich and fudgy as traditional no-bake cookies.

  • 2 cups Granulated sugar
  • 1/3 cup Unsweetened cocoa powder
  • 1/2 cup Coconut oil
  • 1/2 cup Oat milk
  • 1/2 cup Peanut butter (no honey)
  • 3 cups Old-fashioned rolled oats
  • 1 teaspoon Vanilla extract

Instructions

  1. 1

Line baking sheets with parchment paper.

  2. 2

Combine sugar, cocoa, coconut oil, and oat milk in a saucepan.

  3. 3

Bring to a boil and boil for 1 minute.

  4. 4

Remove from heat. Stir in peanut butter and vanilla.

  5. 5

Add oats and mix until well coated.

  6. 6

Drop spoonfuls onto parchment. Let set 30 minutes.

Tips & Substitutions

  • Coconut oil gives these a rich, buttery flavor.
  • Any plant milk works: soy, almond, coconut, or oat.
  • Check your sugar is vegan (some white sugar is processed with bone char).
